- The whole exhibit represents methods of microscopic and micro-chemical analysis of colloids, jams in particular.
Three adulterated jams examined by polarized light.
"Strawberries preserved whole" sold as Strawberry Jam. The rounded cells with white spots are gooseberry.
Raspberry Jam. Large round cells, probably gooseberry, spotted cell certainly is. White streaks are hairs of raspberry.
